Enzymes are proteins which speed up certain chemical reactions. They can be produced from animals, plants, bacteria, fungi and yeast. When listed as an ingredient in cheese, enzymes usually refer to rennet which is used to cure the cheese which can be either animal rennet or microbial rennet. For cheese produced in the United States, over 95% of all rennet is microbial rennet which is vegan.
